Fall Meatloaf

Meatloaf needs a makeover! So it is written and so shall it be eaten! Meatloaf can be so, blah. Because of this I have taken it upon myself to start this new season with something fresh and new. Try this recipe, I promise you will not be disappointed.

This meatloaf was served with green beans and zucchini bread
Fall Meatloaf
1 1/4 lbs Ground turkey
        1 C Zucchini (Shredded and drained)
     3/4 C Apple sauce
        1 C Old fashion oatmeal
     1/2 C Minced onion
     1/2 C Parmesan Cheese (Shredded)
        1  Egg
        2 t Smoked paprika
        Salt and pepper

1/2 C Spiced Peach Jam (Topping)

Mix together ingredients in a large bowl. Divide into two loaf pans or four mini loaves.

Bake at  degrees Fahrenheit for 30 minutes. Temperature should be at least 170 degrees.

Top with jam, spreading evenly on each loaf. Bake for 5-10 more minutes.

Remove from heat and let rest for 5 minutes before serving.

***These are great for making ahead of time and freezing for later***
